In one of my lab classes, we dissected a sheep heart as one of our experiments. It was really, really interesting. It was a “sheep’s pluck” so it contained the trachea, lungs, and heart all attached. It was a lot bigger than I thought. After slicing the heart in half, we had to identify the structures of the heart and such. Since it was a preserved heart it wasn’t bloody or anything – which is good because I think that might have grossed me out more. I’m sure the rest of the sheep was put to use, like for food or other science pursuits, rather than our class just using sheep plucks for the heck of it.
